Putting SSH on the iPhone
Gizmodo has published detailed instructions for getting SSH working on a iPhone, so that there's an easier (if you're a geek) way to get files on and off the device.
I'd suggest it's not for the fainthearted, though if you're already familiar with jailbreaking your iPhone, and want command line access to the phone, then go for it.
